CHOCOLATE CRUNCH CAKE

A fluffy chocolate sponge covered in silky vegan ‘ganache’ and crunchy choc granola ~

Yeh u heard it right. Inspired by my chocolate-y crunch-y oat bowl, of course 🙂

Deets:

 


*60g cacao powder 
*300g flour (plain)
*130g coconut sugar
*3/4 tsp baking soda
*2 tsp baking powder
*Pinch of salt
*350ml plant milk + 1 tbsp apple cider vinegar
*6 tbsp  or 2 flaxeggs
*60g melted coconut oil or vegan butter 
*100ml warm water + 2-3 tsp instant coffee

Ganache:
*150ml coconut milk
*150g chocolate 

.preheat oven to 180 and line 2 8” tins
.mix milk and apple cider. Let curdle


. sift flour, cacao, baking soda, baking powder, salt. Add sugar and mix.
.add all wet to dry


.pour into tins and bake 28-30mins or until cake tester inserted comes out clean

 


.once cooled, make ganache (heat coconut milk, remove from heat, stir through choc)
. decorate and cover in granola
