* 8 chicken thighs
* Salt and Pepper
* 1 tablespoon olive oil
* 1.5 teaspoon garlic powder
* 1 teaspoon dried parsley
* 1 teaspoon onion powder
* 1 teaspoon dried thyme
* 1 teaspoon dried oregano
* 2 large onions
* 1 lemon
* 1 handful of fresh baby spinach (optional)
Preheat the oven to 200 degrees Celsius.
Sprinkle the chicken with garlic powder, onion powder, dried oregano, thyme and parsley, olive oil and a generous amount of salt and pepper. Massage the seasoning and olive oil into the skin of the chicken.
In a large skillet pan, place the chicken skin side down and cook for 10 minutes on a medium heat. Wait until the pan is hot before you place your chicken onto it! Do not move or pick up the chicken as it will disrupt the process of making the skin extra crispy.
Slice your lemon and onions into rings and place under the chicken and cook for a further 4 minutes.
*Turn your chicken skin side up and pop your skillet pan into the oven for 20 minutes.
You should end up with a browned crispy skin chicken with caramelised onions and lemon slices.
Sprinkle some baby spinach under the chicken so it slightly wilts. Serve immediately.
