2 duck breasts
3 Golden apples
1 shallot
50 cl of Cider
25 cl of semi-thick full cream
15 g pat of butter
1 lemon
Salt pepper

Let’s start with the sauce. Slice the shallot and brown it in a saucepan with the butter. Pour in the cider and let reduce for 10 minutes over medium heat. Stir in the cream and season to taste. Let reduce it again for 10 minutes. You must obtain a homogeneous mixture. Keep warm.
