ESPRESSO DOUGHNUTS with a mocha glaze

If it’s got chocolate, give it to me. If it’s got coffee too, even better

makes 10:


1/4 cup melted coconut oil
1 cup coffee drink + 2 tsp apple cider vinegar
1/4 cup apple sauce @koro_uk
3 tbsp @crackd_it or 1 egg

1 2/3 cup plain flour (or spelt)
1/3 cup almond flour @justnatural_uk
1/2 tsp baking powder
1/4 tsp baking soda
1/2 packed cup (coconut) sugar 80g-90g
1 tsp instant espresso
1/4 tsp salt

Mocha glaze:

*1 tsp instant espresso powder
*1/3 cup espresso or coffee drink @bottleshotbrew *gifted*
*1 tbsp (coconut) sugar
*80g chocolate @pureheavenlychocolate
*1.5 tbsp coconut oil @coconutmerchant

🍩 preheat oven to 180 and grease doughnut tin/mould

🍩mix dry

🍩mix wet separately then add to dry

🍩fill mould and bake 15-20 mins (mine took 17)

🍩let cool for 5 mins then demould and let cool completely


🍩 for glaze: bring espresso powder, espresso, sugar to a boil. Remove from heat and stir in choc and coconut oil

🍩dunk and decorate

Glaze firms up in the fridge then it’s ready to monch on
