MEAT STUFFED WITH FARIFA AND VEGETABLES

In this savory dish, succulent meat is skillfully stuffed with a delectable mixture of farifa and fresh vegetables. The combination of tender meat and the rich, flavorful stuffing creates a culinary masterpiece that tantalizes the taste buds.

INGREDIENTS

3 tablespoons of oil
4 tablespoons chopped parsley
1 chopped onion
1 tablespoon minced garlic
1/2 tablespoon of salt
Oil for frying meat
1 piece of 1.5kg diaper
1 cup chopped bacon
1/2 cup chopped pepperoni sausage
10 pods
1/2 package of frozen broccoli (150g)
1/2 red pepper cut into sticks
1 carrot in sticks
2 cups of hot water
2 tablespoons of butter
1 tablespoon mustard to taste
4 tablespoons chopped green onion
2 cups of cassava flour
2 eggs, boiled and chopped

Method of preparation

In a blender, blend the oil with half the parsley, onion, garlic and salt.
Open the piece of meat like a roulade.

Rub the seasoning into the meat and place the bacon, sausage, green beans, broccoli, pepper and carrot in the middle.
Close and tie with string.

In a large pressure cooker, heat the oil and fry the meat on all sides. Add water and pressure cook for 20 minutes. Remove the meat, slice and arrange on a platter.

In the same pan, leave 1 cup (tea) of the cooking liquid and add the butter, mustard, the rest of the parsley, the chives and gradually add the flour until it forms a crumb.

Turn off the heat and mix in the egg.
Distribute the farofa around the meat and serve immediately.
