Simple  chocolate sponge cake

125g self-raising flour
125g butter
125g caster sugar
25g cocoa powder (or more if desired)
2 eggs
1 tablespoon milk


• Preheat the oven to 180 C / Gas 4. Either put grease-proof paper into two sandwich cake tins or grease them with butter.

• To start, place all the ingredients into a large mixing bowl. Stir the mixture until it’s fully blended and the lumps are gone. Divide the mixture evenly between the two tins.

• Bake in the oven for 20 to 25 minutes or until the middle pops back up within 3 seconds if you poke it with your finger.


• Cool for 10 to 15 minutes then serve with your choice of topping or filling. I recommend thick sweet cream. Enjoy!
