300g flour (used a mix of spelt and plain)
135g caster or coconut sugar 
3/4 tsp baking soda
1 3/4 tsp baking powder
1 1/4 rounded tbsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
325ml plant milk + 1 tbsp apple cider vinegar
2 vegan eggs
140g apple sauce
70g (coconut) oil or vegan butter melted

Apple filling:

3 medium apples peeled and diced
3 tbsp (cinnamon) syrup 
1/2 tbsp cinnamon
1 tbsp water or apple juice
3/4 tsp cornstarch



250g thick Greek df yogurt 
1/3 cup df cream cheese 80g 
1/3 cup coconut cream 80g
60g icing sugar

preheat oven to 180
line cake tins
mix apple cider vinegar and milk. Set aside.

sieve dry then add all wet
bake 25-30mins until cake tester comes out clean.

Let cool
stew/microwave apples until soft. Let cool.

decorate with icing (with a layer of cinny apples in the middle)
make a wish
