Stuffed peppers with minced meat and rice

Do you miss your grandma’s stuffed peppers with minced meat and rice? With our recipe you can easily make them yourself in the oven!

INGREDIENTS

2 red peppers

2 yellow peppers

1 onion

1 clove of garlic

150 g long grain rice

½ bunch of spring onions

1 tbsp olive oil

500 g mixed minced meat

3 tbsp tomato paste

1 pinch of salt

1 pinch of pepper

300 ml vegetable stock

PREPARATION

1. Wash the peppers and cut off the top quarter of each to form a lid. Remove the seeds. Peel the onion and garlic and cut into small cubes. Prepare the rice according to the instructions on the packet.

2. Wash the spring onions, clean them and cut them into fine rings. Heat the oil in a pan and fry the mixed minced meat in it. After about 5 minutes, add the onion and garlic cubes.

3. Add the tomato paste, salt, pepper and 1/3 of the vegetable stock to the minced meat and stir in. Let everything simmer for about 5 minutes. Preheat the oven to 200 degrees top and bottom heat.

4. Add the rice to the minced meat, fold in loosely and then fill the peppers. Place the peppers in a casserole dish and sprinkle with the spring onions. Place the cut-off pepper lid lightly on the filling and pour in the remaining vegetable stock.

5. Bake the peppers on the bottom rack in the preheated oven for about 30 minutes. If the surface becomes too dark, cover the peppers with aluminum foil. Enjoy your meal!
