larger pancakes:
35g oat flour
20g plain flour
1/2 baking powder
1/4 baking soda
100g thick df yog
2 1/2 tsp instant coffee
3 tbsp (or sub for 1 egg)
1 tbsp syrup (to taste)
coffee drizzle:
2 tbsp syrup ( sugar free maple)
3 tbsp df yogurt
optional plant milk – if yog is thicker
left over coffee
Dissolve instant coffee in 3 tsp warm water
Mix flours, baking powder, baking soda,
Add egg, yogurt, syrup and coffee (save 1/3 of the coffee for the drizzle)
Let sit for a few mins
Cook on each side 2-3 mins
Mix drizzle ingredients, milk last until desired consistency
Top with walnuts and serve :))
