Chicken soup with rice

• 1 chicken breast, boneless and skinless

• 1 tablespoon olive oil

  5. Remove the chicken breast from the pot and place it on a plate. Using two forks, shred the chicken into smaller pieces.
  6. Add the rice to the pot and simmer for about 15 minutes, or until the rice is cooked and tender.
  7. Add the shredded chicken back to the pot. Taste and adjust seasoning as necessary.
