LEMON  BLUEBERRY DONUTS

DONUTS

 

1 1/4 cup plain flour
1/4 cup almond four
pinch of salt
tsp baking powder
1/2 cup caster sugar
1/4 cup light brown sugar
zest of one lemon
1 egg
tsp vanilla
1/4 cup veg oil
1/4 cup plain yogurt
2-3 tbsp milk
blueberries

TOPPING


juice 1/2 lemon
1 cup powdered/icing sugar

how to:

grease donut moulds and preheat oven to 180c fan.
mix flours, baking powder and salt well.

in a separate bowl, add caster and light brown sugar with lemon zest and mix. add in one egg and whisk until light in colour. then add vanilla, oil and yogurt before mixing again.
add wet ingredients to the dry and mix until just combined. add in a handful of blueberries and a dash of milk if the mix is too thick.

 

divide mix into donut moulds and bake for 15 minutes or until a knife comes out clean. leave to cool before adding frosting*.

*to make frosting, add lemon juice and powdered sugar (gradually) in a bowl. you want the mix to be quite thick – if too thick, add more lemon juice, if too runny add more icing sugar!)
