Make your own meatloaf

Make your own delicious meatloaf – we’ll show you how! With fresh meat, good spices and a little skill, you can now easily bake fine meatloaf at home.

INGREDIENTS

500 g lean pork (e.g. pork shoulder)

500 g pork belly

1 onion

20 g curing salt

300 g ice cubes

1 egg (size M)

½ tsp freshly ground pepper

½ tsp marjoram

½ tsp thyme

a little grated nutmeg

1 tsp ground coriander seeds

½ tsp ground ginger

5 g salt

Bread rolls as desired

Mustard as desired

PREPARATION

1. Cut the pork and pork belly into small pieces and place in the freezer for about 10 minutes for further processing.

2. Preheat the oven to 170 degrees circulating air (top and bottom heat: 190 degrees) and line a loaf pan (approx. 20 x 10 cm) with baking paper. Peel and dice the onion. Mix the meat cubes with the curing salt and put them through the meat grinder. Put the minced meat in portions with the ice cubes, onions and egg in a blender and puree to a fine sausage meat.

3. Mix the sausage meat with the spices and salt and spread it in the loaf pan. Tap the loaf pan on the worktop so that trapped air can escape. Smooth out the sausage meat mixture with a wet spoon and cut a diamond pattern into it with a small knife. Bake in the preheated oven on the middle rack for approx. 60 minutes.

4. Take the meat loaf out of the oven and let it cool a little. Carefully lift the meat loaf out of the pan, cut into slices and enjoy with bread rolls and mustard. Enjoy!
