These cookies are crunchy, creamy, buttery and Biscoff-y


A shortbread cookie, filled with Biscoff spread and coated in white chocolate

All you need is

For the shortbread cookies:
215g unsalted butter, softened
115g granulated sugar
325g plain flour

For the topping:


100g Biscoff spread
300g white chocolate, melted

Makes about 20 cookies

Bake 160C fan for 10-12 minutes until lightly golden

Make sure to press down the middle of the cookies again as soon as they come out of the oven, then let them cool fully before adding the Biscoff spread and white chocolate
