Basque Burnt Cheesecake

aka lazy girl cheesecake
600g cream cheese (softened)
200g granulated sugar
4 eggs
300g heavy cream
1 tsp vanilla
40g plain flour


in a stand mixer, beat the cream cheese on medium until fluffy before gradually adding in the sugar. mix for another 2-3 minutes until smooth. add in eggs one at a time, mixing well after each addition. mix in heavy cream and vanilla. sift in flour and fold it into the batter with a spatula.


pour the mixture into an 8-inch double-lined round pan and bake at 200 degrees for 50-60 minutes.

remove from oven and set aside to cool in room temperature for an hour. refrigerate for at least another hour or overnight.
