Chinese fried rice
Chinese fried rice, known as “fried rice,” is a popular dish in Asian cuisine that combines cooked rice with ingredients such as vegetables, meat and eggs, stir-fried in sesame oil and soy sauce. • 2 cups of cold, cooked white rice (preferably from the previous day)
• 200 g of pork, chicken, shrimp or other proteins (cut into small pieces)
• 1 cup mixed vegetables (carrots, peas, onion, bell pepper, etc.), all cut into small pieces
• 2-3 beaten eggs
• 3 tablespoons vegetable oil (such as sesame oil or peanut oil)
• 3 tablespoons soy sauce
• 1 teaspoon sesame oil (optional but recommended)
• 1 clove of garlic, minced
• Salt and pepper to taste
• Optional: chopped scallions, fresh cilantro, chopped peanuts

- Heat a large skillet or wok over medium-high heat and add 1 tablespoon of oil. If you are using pork, chicken, or shrimp, cook them until golden brown and cooked through. Then, remove them from the pan and set aside.
- In the same pan, add another tablespoon of oil and sauté the vegetables until tender but still crisp. Then, remove them and reserve them along with the proteins.
- Add the last tablespoon of oil to the pan and add the minced garlic. Cook for a few seconds until fragrant.
- Push the garlic to the side of the pan and pour the beaten eggs into the empty space. Stir the eggs as they cook until scrambled and cooked through.
- Add the cold rice to the pan and stir to combine with the eggs and garlic.
- Pour in the soy sauce and, if you are using sesame oil, add that too. Continue stirring so that the rice is infused with the flavors and browns slightly.
- Add the reserved proteins and vegetables back to the pan. Stir everything together until well mixed and heated through.
- Season with salt and pepper to taste. You can adjust the amount of soy sauce according to your taste preference.
- Optionally, you can add chopped scallions, fresh cilantro or chopped peanuts as a topping before serving.
