Chinese fried rice, known as “fried rice,” is a popular dish in Asian cuisine that combines cooked rice with ingredients such as vegetables, meat and eggs, stir-fried in sesame oil and soy sauce. Ingredients:

• 2 cups of cold, cooked white rice (preferably from the previous day)

• 200 g of pork, chicken, shrimp or other proteins (cut into small pieces)

• 1 cup mixed vegetables (carrots, peas, onion, bell pepper, etc.), all cut into small pieces

• 2-3 beaten eggs

• 3 tablespoons vegetable oil (such as sesame oil or peanut oil)

• 3 tablespoons soy sauce

• 1 teaspoon sesame oil (optional but recommended)

• 1 clove of garlic, minced

• Salt and pepper to taste

• Optional: chopped scallions, fresh cilantro, chopped peanuts

Preparation:

  1. Heat a large skillet or wok over medium-high heat and add 1 tablespoon of oil. If you are using pork, chicken, or shrimp, cook them until golden brown and cooked through. Then, remove them from the pan and set aside.
  2. In the same pan, add another tablespoon of oil and sauté the vegetables until tender but still crisp. Then, remove them and reserve them along with the proteins.
  3. Add the last tablespoon of oil to the pan and add the minced garlic. Cook for a few seconds until fragrant.
  4. Push the garlic to the side of the pan and pour the beaten eggs into the empty space. Stir the eggs as they cook until scrambled and cooked through.
  5. Add the cold rice to the pan and stir to combine with the eggs and garlic.
  6. Pour in the soy sauce and, if you are using sesame oil, add that too. Continue stirring so that the rice is infused with the flavors and browns slightly.
  7. Add the reserved proteins and vegetables back to the pan. Stir everything together until well mixed and heated through.
  8. Season with salt and pepper to taste. You can adjust the amount of soy sauce according to your taste preference.
  9. Optionally, you can add chopped scallions, fresh cilantro or chopped peanuts as a topping before serving.
